What is Sencha? (pronounced: sen-cha)
Sencha (煎茶) is a type of steamed green tea that uses leaves that are constantly exposed to the sunlight or shaded for less than a week before harvest.
It is made from first or second flush leaves, although first flush teas are usually referred to as Shincha (新茶, literally translates as “new tea”) and is highly sought after for its fresh, green flavour.
Sencha accounts for more than 75% of all teas produced in Japan and is a crucial part of the Japanese lifestyle.
